Sydney hospitality group Hunter St Hospitality will open the doors to Rockpool Lounge tomorrow, allowing guests to seamlessly transition from renowned restaurant Rockpool Bar & Grill to the late-night lounge bar.

Situated above the restaurant, the 50-person bar offers an intimate escape for live music and refined cocktails, with live entertainment beginning at 9:30pm every Thursday, Friday and Saturday.

Frank Tucker, CEO of Hunter St Hospitality, says the venue was designed to cater to the evolving expectations of guests and increasing demand for night-time entertainment.

“Today’s guests look for an experience that genuinely enhances their evening. Our aim is to enrich Sydney’s night-time scene by offering a space that extends the dining experience seamlessly and also welcomes those in search of a sophisticated yet relaxed lounge bar, whether they are dining with us or not.”

Spearheaded by Bar Manager Leonardo Zuccardi Merli, the cocktail menu nods to classic recipes with a modern twist. One of the highlights, the Frozen Martini, is crafted with house-made olive brine and black, green and Taggiasche olives.

Other signature cocktails include the Velvet Negroni, Vintage Harvard and a selection of five highballs, each priced at just $20, including Lounge V&S (vodka, lime and jalapeno soda), Lounge C&S (Campari and mandarine soda) and Lounge Horse’s Neck (cognac VS and ginger ale).

The cocktail list also includes Refined Classics, a changing list of seasonal twists on old favourites, and Forgotten Classics, classic cocktail recipes that have stood the test of time. Each month, the Spirits Club will also showcase a monthly selection of limited-edition releases.

The cocktail menu is complemented by an extensive wine list, including more than 40 by-the-glass options from both acclaimed and emerging producers.

Executive Chef Santiago Aristizabal leads the culinary experience, which includes smaller snack plates and larger dishes, such as anchovy on smoked toast, Wagyu brisket empanadas, the signature Rockpool cheeseburger and sides. Guests will also have the option to order from the full Rockpool Bar & Grill menu.
